Tahira Lamb Kofta Kebab

Ingredients: Lamb and Chicken Mince 60%, Soya, Onion, Sodium Bicarbonate(raising agent), Garlic, Ginger, Coriander, Parsley, Chilli, Spices, Black Pepper, Salt.

 4 Medium eggplants
 2 cups Yoghurt
 3 tbsp Tahini sauce
 2 Garlic cloves, Mashed
 ½ tsp Salt
 ½ tsp Black pepper
 2 tbsp Lemon juice
 1 tsp Cumin
 2 tbsp Olive oil

Heat the kebab in the microwave for 1-2 minutes each side.

Place the eggplants directly over the burner on medium heat and roast for about 15 - 20 minutes, turning occasionally.

Take off the skin of the eggplants. Chop the eggplants.

Add the yoghurt, tahini sauce, garlic, salt, pepper, lemon juice, cumin and olive oil. Mix very well

Chop the kebabs in large chunks.

Place the eggplant puree in a large plate and top over with the kebabs.
